1 can pineapple chunks
2 Tbs. cornstarch
1 (1 Lb.) package frozen meatballs, thawed
1 can water chestnuts
1/2 cup cashews
2 cups rice
Bring 4 cups water to boil, add uncooked rice, cover and cook 15 minutes, stirring once or twice, turn off heat, do not remove lid, let sit covered 5 minutes longer. While the rice is cooking, pour pineapple and juice into med. fry pan. Bring to boil. Add 2 Tbs. cornstarch to 1/2 cup cold water, mixing thoroughly. Add all at once to pineapple. Stir constantly until thickened. Add remaining ingredients. Cook till heated through. Serve over rice.

Pretty easy recipe, but bland. Needs some garlic, and I dunno... parsley? Italian seasoning?
